And when you're looking for new ways to get the job done, sometimes you end up running across a little gold mine that just happens to taste delicious too! We've been eating regular homemade kefir for years, but needed to find a dairy-free option for several of our kiddos. Enter water kefir lemonade!

It was still a little tricky though, because most recipes out there use whey so we got busy experimenting with different methods that still produced a great probiotic lemonade with plenty of fizz. We're thrilled to say that we've perfected this tasty little number and it's low-sugar as well!  A little bit of our homemade stevia glycerite makes for the perfect balance of sweet and tart.

How to Make Water Kefir Lemonade

If you've never used water kefir grains before, don't worry — we'll walk you through getting started. It may seem a little complicated at first glance, but I promise that it's really not too terrible. You'll have active water kefir grains ready to do their magic in no time!

Step 1: Activate Dry Water Kefir Grains

Ingredients

Directions

  1. Bring ½ cup of water to boil, then turn off heat
  2. Dissolve ¼ cup sugar in water
  3. Pour mixture into mason jar
  4. Add 2½ to 3½  cups of room temperature filtered water
  5. Water temperature should be between 65-85º before adding water kefir grains. Use ice water bath or let sit if necessary to reach proper temperature range (kefir grains may die if added to hot water)
  6. Pour grains into cooled sugar water
  7. Cover jar with coffee filter and secure with rubber band
  8. Let sit in warm spot for 3-4 days (the grains are ready to use when they're plump and translucent)
  9. Strain out and discard water

How to Make Water Kefir Lemonade at Home (Dairy-free)

Step 2: Make Water Kefir Lemonade

Ingredients

  • Juice of 10 lemons
  • ¾ cup (this sugar will feed the grains)
  • Activated water kefir grains (the more grains, the shorter the fermentation time)
  • 2 ½ to 3 cups of spring water or filtered water
  • Gallon jar (sterilized)
  • Unbleached coffee filter and rubber band
  • ½ cup stevia glycerite (less if using store bought stevia extract)
  • ½ cup organic cane sugar (this sugar is for sweetening the lemonade; feel free to use less if you like it more tart)

Directions

  1. Bring ½ cup of water to boil, then turn off heat
  2. Dissolve ¾ cup sugar in water
  3. Pour mixture into gallon jar
  4. Add lemon juice
  5. Fill jar with filtered water, leaving enough space for grains
  6. Check temperature of water to make sure it's between 65-85º
  7. Pour grains into cooled lemonade
  8. Cover jar with coffee filter and secure with rubber band
  9. Let sit in warm spot for 2-4 days (the longer it ferments, the less sugar that will be left)
  10. Once fermentation is complete, strain out grains
  11. Sweeten with stevia glycerite or sugar to taste
  12. Store in refrigerator for up to one week (NOTE: the lemonade will continue to ferment at a much slower rate so it's always a good idea to store with an air releasing lid)

How to Store Kefir Grains Until Next Use (Short Breaks, Up to 3 Weeks)

  1. Add water kefir grains to 1 quart fresh sugar water (same directions as above)
  2. Put a tight lid on the container and place in the refrigerator
  3. When ready to make water kefir again, separate the grains from the storage liquid, place in fresh sugar water, and culture as usual
