Gluten-free Quinoa Stuffed Green PeppersLiving a gluten-free life can seem overwhelming and complicated sometimes.  But with the number of helpful foodie blogs serving up simple makeover recipes along with companies delivering top-notch gluten-free mixes and flours, taking the plunge is more enjoyable than it is terrorizing!

On that note, here's my stuffed green peppers makeover for healthier, gluten-free, antioxidant-rich awesomeness with all the flavor of my mom's old standby. My mouth is watering right now just thinking about it!

Gluten-free Quinoa Stuffed Green Peppers Makeover

Ingredients

6 medium organic green peppers
1 lb grass fed hamburger
1/2 cup chopped onion
1.5 cups organic (or homemade) beef stock or water
3/4 cups uncooked organic quinoa (Living Now Foods is excellent)
14 oz organic diced tomatoes, drained (Jovial's organic tomatoes are packaged in glass)
3 tablespoons Worcestershire
1.5 cups shredded cheese, your choice (I like cheddar + an Italian blend)
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp granulated garlic

Directions

  1. Preheat oven to 350 degrees
  2. Wash green peppers, cut tops off, hull out  and place in baking dish
  3. Use large skillet to fully cook hamburger and onion, leave in skillet, drain, then set aside
  4. Bring stock to rapid boil
  5. Place quinoa is strainer, rinse with cold water, then add to boiling stock
  6. Turn heat to med-low, simmer for 15 minutes; fluff with fork when done
  7. Add tomatoes, Worcestershire, garlic, salt and pepper to hamburger and mix well
  8. Add quinoa and 1 1/4 cups of shredded cheese and mix well
  9. Scoop mixture into green peppers (any extra filling can be baked without green pepper, in oven safe container)
  10. Bake uncovered at 350 degrees for 20-25 minutes
  11. Top with additional cheese, then bake 5 minutes until melted
  12. Serve warm and don't expect any leftovers!
